The starchy corms are prepared in an incredible variety of ways, from traditional Hawaiian fermented poi to modern fried chips. I\u2019m generally a fan of baked or boiled taro \u2014 once cooked, it\u2019s like a potato but better. Here is one of my favorite ways to prepare taro: boiled, then cooked in coconut milk. Rich and delicious. If you live outside of the tropics and need a source for taro, the Asian grocery stores in my neighborhood nearly always carry it.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3 lbs of taro corms<\/li>\n\n\n\n<li>Tsp salt<\/li>\n\n\n\n<li>Water<\/li>\n\n\n\n<li>1 can (13-15 oz) coconut milk \u2014 I recommend regular, but you could substitute \u201clight\u201d coconut milk<\/li>\n<\/ul>\n\n\n\n<p>Method:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Scrub the corms well.<\/li>\n\n\n\n<li>Place corms in a pot, add salt and enough water to cover them by about half.<\/li>\n\n\n\n<li>Bring to a boil, then keep the water at a simmer to a light boil for 1.5 hours, or until taro is completely tender. Do&nbsp;<strong>not<\/strong>&nbsp;under cook the taro.<\/li>\n\n\n\n<li>Remove taro from pot, let cool, peel, and chop into cubes.<\/li>\n\n\n\n<li>Taste, adding more salt if needed.<\/li>\n\n\n\n<li>Return taro pieces to pot, and add coconut milk, and cook gently until heated through and thickened.<\/li>\n<\/ol>\n\n\n\n<p>I had this at a tiki party before Christmas and it was heavenly \u2014 wonderful as a side dish, or even for breakfast.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Taro is a staple food across Polynesia.
